Sam Choy's Kamuela Brokdamout BBQ Sauce

Got this from my father Cully. Sam Choy is a popular Hawaiian Chef. Firm instructions were given to NOT substitute or add any other ingredients.

Bring the following ingredients to boil in a saucepan.

1 14 ounce can of HUNTS TOMATO SAUCE
1 cup BROWN SUGAR
1 cup minced ONION
1/4 cup VINEGAR
1/4 cup HONEY
1/4 cup MOLASSES
1 tablespoon STEAK SAUCE
1 teaspoon LIQUID SMOKE
1 teaspoon CHILI POWDER
1/2 teaspoon BLACK PEPPER
1/4 teaspoon MUSTARD
1 CINNAMON STICK

Reduce to simmer until sauce loses moisture and thickens to taste. Strain sauce and refrigerate until ready to use.

Some BBQ tips from Cully (my father):

- Pre-steam ribs, pork, beef or chicken before grilling.
- When the meat is steamed and tender, put it on the grill without any sauce. Cook it slowly turning and basting it with salted water and vinegar until it is almost falling-off-the-bone done. Then turn down heat and put sauce on the meat a the last minute and "dry" it on the meat. Sugar burns easily, and turns black so watch it.
