Mom's Tortilla Soup

Note: This recipe requires a Blendtec or Vitamix blender. I highly recommend forking out the cash for one.

Place following ingredients in blender and secure lid. Select Soups cycle. (For Vitamix, run until desired consistency is achieved):

3 Roma TOMATOES halved
2 tablespoons TACO SEASONING
1 two inch cube of CHEDDAR CHEESE
1 small slice of JALAPENO PEPPER
3 sprigs CILANTRO
1/2 teaspoon GARLIC SALT
1/3 large CARROT
1/4 of an ONION
1 teaspoon CHICKEN BULLION
1/4 teaspoon PEPPER
2 cups HOT WATER

After cycle add 1/2 cup TORTILLA CHIPS and pulse 3 times to create chunky soup. Pour into pot and add 1 pound of shredded ROTISSERIE CHICKEN if desired. Heat through.

Brent's Tortilla Soup

Combine the following and simmer for 15 minutes:

6 cups CHICKEN BROTH
1 can MEXICAN ROTEL
1/2 ROTISSERIE CHICKEN shredded
1/2 cup RED ONION
2 teaspoons CUMIN
1/2 tsp OREGANO
Juice of 1 LIME
Just prior to serving mix in 1 AVOCADO cubed and 1/2 bunch chopped CILANTRO.

Top with tortilla strips (or crushed tortilla chips to save time):

Wet 6 CORN TORTILLAS on both sides. Salt, cut into strips and bake on cookie sheet at 350ยบ until crisp.
