Chicken Enchildas with Red Sauce

You could call these "dry" enchiladas. There is nothing inside except for chicken—like the enchiladas we'd get at a favorite dive in Dallas. Make extra batch of enchilada sauce (recipe coming) and freeze for future.

prep time:
30 minutes cook time: 40 minutes servings: 6

Shred one small ROTISSERIE CHICKEN (or 1/2 of a Costco rotisserie chicken)
Saute shredded chicken in 2 tablespoons OIL for 5 minutes and sprinkle liberally with ONION POWDER.
Warm 12 small CORN TORTILLAS in microwave.
Fill and roll each tortilla with some chicken.
Just prior to serving place enchiladas on individual plates and spoon on a liberal amount of RED ENCHILADA SAUCE (use the canned stuff until I post the recipe). Top with a little shredded CHEESE and place in microwave or under low broil to melt cheese and warm tortillas.

Serve with sour cream, Spanish rice and refried beans. I like to add 1/4 cup water to canned refried beans to make them a little more runny.

Mom's Tortilla Soup

Note: This recipe requires a Blendtec or Vitamix blender. I highly recommend forking out the cash for one.

Place following ingredients in blender and secure lid. Select Soups cycle. (For Vitamix, run until desired consistency is achieved):

3 Roma TOMATOES halved
2 tablespoons TACO SEASONING
1 two inch cube of CHEDDAR CHEESE
1 small slice of JALAPENO PEPPER
3 sprigs CILANTRO
1/2 teaspoon GARLIC SALT
1/3 large CARROT
1/4 of an ONION
1 teaspoon CHICKEN BULLION
1/4 teaspoon PEPPER
2 cups HOT WATER

After cycle add 1/2 cup TORTILLA CHIPS and pulse 3 times to create chunky soup. Pour into pot and add 1 pound of shredded ROTISSERIE CHICKEN if desired. Heat through.

Oven Fried Fish or Chicken Strips

Cut 1-1/2 lbs of FISH or chicken into strips.

Mix and set aside:
1/2 cup MAYO
1 teaspoon LEMON JUICE
1 tablespoon WATER

Mix:
1 cup BREAD CRUMBS
1 cup CORN MEAL
1 teaspoon GARLIC POWDER
1/2 - 1 teaspoon SALT (fish is saltier than chicken)

Dip in mayo mixture then coat in crumb mixture.
Coat frying pan with some oil. Place strips and spray tops with PAM.
Bake 450˚ for 20 minutes or until done. May need to broil tops a minute or to for added crispness.

Brent's Tortilla Soup

Combine the following and simmer for 15 minutes:

6 cups CHICKEN BROTH
1 can MEXICAN ROTEL
1/2 ROTISSERIE CHICKEN shredded
1/2 cup RED ONION
2 teaspoons CUMIN
1/2 tsp OREGANO
Juice of 1 LIME
Just prior to serving mix in 1 AVOCADO cubed and 1/2 bunch chopped CILANTRO.

Top with tortilla strips (or crushed tortilla chips to save time):

Wet 6 CORN TORTILLAS on both sides. Salt, cut into strips and bake on cookie sheet at 350ยบ until crisp.

Teryaki Marinade

prep time: 10 minutes & 2 hrs marinade time cook time: 20 minutes servings: depends

1 cup SOY SAUCE
1 cup SUGAR (white for white meat, brown for dark meats)
1 tablespoon minced GINGER ROOT
Variations include addition of 3 cloves crushed GARLIC and/or 2 teaspoons SESAME OIL

Marinade light meat for no more than 2 hours. Red meat can sit in marinade for up to 4 hours.
BBQ over medium heat.
